Baby Back Ribs with Black Mocha Stout BBQ Sauce

2 slabs of pork baby back ribs

3 TBS Bat Boy Pork and Rib Rub

1 bottle dark beer

Smoking  J’s Black Mocha BBQ Sauce

Rub each slab of ribs with 1 ½ TBS of Bat Boy seasoning. Let sit overnight, or a few hours, refrigerated. Preheat oven to 300 degrees. Place ribs in a roasting pan. Add the bottle of dark beer. Cover with foil. Cook for 2 1/2 hours, or until tender. You don’t want the meat falling off the bone, but the bones should give a bit when tugged. Heat a grill to medium high heat. If you have wood chips add them to the grill. Brush ribs with the BBQ sauce. Cook indirectly, off the flame, for about 10 minutes per side. Be careful not to burn. Cut into ribs and serve immediately with extra sauce. The ribs can be cooked in the oven, cooled, and refrigerated for a couple of days before finishing on the grill.
